A scraped surface heat exchanger (SSHE) For Cooling or Heating of Viscos Material Like Peanut Butter, Spreades, Sauses, Margarine, mayonnaise and other uses rotating blades to continuously scrape the inside of a cylinder wall to remove product and ensure uniform heat transfer. The blades are attached to a moving shaft or frame and can be made of rigid plastic to avoid damaging the surface. The product enters the cylinder in a corkscrew pattern in the same direction as the blades, which helps to preserve product quality by reducing shear and pressure drop. The blades also create a thin film on the heat transfer surface, which increases the surface area available for heat transfer.
